I completely missed it in 2021; I was very disconnected from the cycles of nature in Eternal Lockdown.  This year I set a reminder in the hand-held computing device that I have become too dependent upon. Smrt.  Craving a tomato-based meal, I chose classic spaghetti and meatballs. Please, no &#8220;not how they eat meatballs in Italy&#8221; hipster foodie sneers&#8211;I have eaten meatballs in Italy, thank you&#8211;these are <strong>American<\/strong> mid-century meatballs, and they are brilliant.<\/p>\n\n\n\n<p>This is a vintage recipe from &#8220;the 1960s&#8221;, reprinted in a (now also vintage?) <a href=\"https:\/\/statecenterrosefestival.org\/\" target=\"_blank\" rel=\"noreferrer noopener\">Rose Festival<\/a> cookbook. The author is the woman who taught me how to keep a softball\/baseball scorebook when I was in the seventh grade, and may possibly also have been involved with local 4-H?&#8211;at any rate, a trusted source. I love this, but I only grow <a href=\"https:\/\/radishthegreat.com\/blog\/2021\/05\/07\/tomato-tomate-paradeiser\/\" target=\"_blank\" rel=\"noreferrer noopener\">small weird tomatoes<\/a>. Since this is a holiday celebration, I went all out and purchased some fancy <a href=\"https:\/\/www.pomito.de\/de\/produkte\/tomatenfruchtfleisch-stucken\/pomito-tomatenfruchtfleisch-stucken\/500\/\" target=\"_blank\" rel=\"noreferrer noopener\">Italian tomatoes<\/a> and then stalked them online.  Yup. So I pumped up the 1\/8 teaspoon (the mind reels) of garlic powder in the sauce to a reasonable pile of chopped garlic, doubled the parsley, and tripled the oregano.  In the balls I quadrupled the black pepper, but left everything else as written. <\/p>\n\n\n\n<div class=\"wp-block-image is-style-default\"><figure class=\"aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2022\/03\/amballs_sauce.jpg\" alt=\"\" class=\"wp-image-1096\" width=\"563\" height=\"750\" srcset=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2022\/03\/amballs_sauce.jpg 750w, https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2022\/03\/amballs_sauce-225x300.jpg 225w\" sizes=\"auto, (max-width: 563px) 100vw, 563px\" \/><figcaption><em>So many beautiful green bits.<\/em><br><em>March 2022<\/em><\/figcaption><\/figure><\/div>\n\n\n\n<p>The other thing I love about this recipe is the balls are browned in a pan for that yummy <em><em><a href=\"https:\/\/de.wikipedia.org\/wiki\/Maillard-Reaktion\" target=\"_blank\" rel=\"noreferrer noopener\">R\u00f6staroma<\/a><\/em><\/em>, but I don&#8217;t have to worry about the insides being fully cooked before the outsides are burned. They simmer in the sauce for half an hour, or until the pasta water finally boils. Always done to the perfect degree of doneness (how is this more awkward to read than &#8220;<em>immer perfekt gegart<\/em>&#8220;??) and never dry.<\/p>\n\n\n\n<div class=\"wp-block-image is-style-default\"><figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"986\" src=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2022\/03\/amballs_insauce.jpg\" alt=\"\" class=\"wp-image-1097\" srcset=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2022\/03\/amballs_insauce.jpg 1000w, https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2022\/03\/amballs_insauce-300x296.jpg 300w, https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2022\/03\/amballs_insauce-768x757.jpg 768w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><figcaption><em>OK, that one got a little burned<\/em> <em>while I was playing with the !#$%^* hand-held computer.<\/em><br><em>March 2022<\/em><\/figcaption><\/figure><\/div>\n\n\n\n<p>As an astute reader, you have already noticed that &#8220;spaghetti&#8221; is shorthand for &#8220;whatever pasta Mr Radish grabbed when it was on sale two weeks ago.&#8221;  I know rules about shapes exist, but unless you&#8217;re trying to recreate a specific childhood experience, they don&#8217;t matter for this sauce.  Use whatever shape or low-carb substitute you desire!
