It tasted like the cheap stuff my Dad bought from the same <em>Discounter<\/em> when I was growing up in Iowa, minus the neon-green food coloring.  I only need it a couple times a year for baseball hot dogs, but with so much sugar and vinegar, it was still fine to eat after years in the fridge.<br><br>But nothing lasts forever.  This year, there was no relish offered for sale at this <em>Discounter<\/em>.  As I cleaned the fridge, panic set in.<\/p>\n\n\n<div class=\"wp-block-image is-style-default\">\n<figure class=\"aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2023\/03\/relish1.jpg\" alt=\"\" class=\"wp-image-1981\" width=\"345\" height=\"563\" srcset=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2023\/03\/relish1.jpg 460w, https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2023\/03\/relish1-184x300.jpg 184w\" sizes=\"auto, (max-width: 345px) 100vw, 345px\" \/><figcaption class=\"wp-element-caption\"><em>So long, old friend.<br>March 2023<\/em><\/figcaption><\/figure>\n<\/div>\n\n\n<p>Tough choice:  Pay 8\u20ac for a jar of name-brand imported pickle relish at a specialty shop, or buy out-of-season ingredients for more money and make my own.  OK, more of an <strong>obvious<\/strong> choice.<br><br>Pickle relish was developed to take advantage of the August glut of cucumbers, and make them shelf-stable so they could be enjoyed in winter.  All the recipes I found started with ten pounds of cucumbers&#8230;  At this <a href=\"https:\/\/de.statista.com\/statistik\/daten\/studie\/579310\/umfrage\/monatliche-verbraucherpreise-fuer-gurken-in-deutschland\/#:~:text=Verbraucherpreisindex%20f%C3%BCr%20Gurken%20in%20Deutschland%20bis%202023&amp;text=Im%20Februar%20des%20Jahres%202023,sich%20die%20Gurkenpreise%20nahezu%20verdoppelt.\" target=\"_blank\" rel=\"noopener\" title=\"time of year\/German inflationary history\">time of year\/German inflationary history<\/a>, a single cucumber at the farmers market costs the same amount as a jar of six &#8220;American-style&#8221; hot dogs.  Panic was turning quickly to despair&#8230;then there was a sale at the grocery store in the neighborhood and I scored three cukes for 3\u20ac. Like <a href=\"https:\/\/radishthegreat.com\/blog\/2022\/01\/31\/thai-style-meatballs-and-the-search-for-lemongrass-paste\/\" target=\"_blank\" rel=\"noreferrer noopener\">lemongrass<\/a>, it&#8217;s a component of a thousand pre-mixes, but nearly impossible to find alone. Why waste shelf space with pure spices when your preferred customers want a nebulous &#8220;Tofu-Seasoning&#8221; at twice the profit? Finally, my Saturday morning spice dealer came through with a 3\u20ac-baggie.  It&#8217;s sitting in the cupboard next to the <a href=\"https:\/\/radishthegreat.com\/blog\/2021\/02\/01\/meatballmonday-fleischballchen-israeli-style\/\" target=\"_blank\" rel=\"noopener\" title=\"Baharat\">Baharat<\/a>.<\/p>\n\n\n<div class=\"wp-block-image is-style-default\">\n<figure class=\"aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2023\/03\/selleriesaat.jpg\" alt=\"\" class=\"wp-image-1987\" width=\"375\" height=\"364\" srcset=\"https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2023\/03\/selleriesaat.jpg 750w, https:\/\/radishthegreat.com\/blog\/wp-content\/uploads\/2023\/03\/selleriesaat-300x291.jpg 300w\" sizes=\"auto, (max-width: 375px) 100vw, 375px\" \/><figcaption class=\"wp-element-caption\"><em>Basically powdered umami.<br>March 2023<\/em><\/figcaption><\/figure>\n<\/div>\n\n\n<p>Simultaneously, I hunted down appropriate salt. &#8220;Pickling salt&#8221; turns up &#8220;<em>P\u00f6kelsalz<\/em>&#8220;, which is nitrates for sausage-making. Useful but wrong. I settled for &#8220;<a href=\"https:\/\/www.bad-reichenhaller.de\/de\/produkte\/alpensaline\/grobes-alpensalz.html\" target=\"_blank\" rel=\"noopener\" title=\"rustic Alpine salt\">rustic Alpine salt<\/a>&#8220;&#8211;from a <a href=\"https:\/\/www.salzbergwerk.de\/de\" target=\"_blank\" rel=\"noopener\" title=\"mine\">mine<\/a> that Mr Radish and I visited in 2008. Next time&#8211;I&#8217;m thinking August 2024&#8211;I will adjust the recipe down to one cucumber, chop it even smaller, and add more sugar.  I put one jar in the freezer; I don&#8217;t know if the texture will hold through a freeze-thaw cycle, but I&#8217;m willing to take the risk in order to find out. The other two jars are ready for Opening Day. I have also been eating it on bread smeared with cream cheese.  The race to finish it before it goes fuzzy is on!<br><br>Meanwhile, I am looking for more recipes that use celery seed.
