{"id":1445,"date":"2022-08-15T11:56:00","date_gmt":"2022-08-15T09:56:00","guid":{"rendered":"https:\/\/radishthegreat.com\/blog\/?p=1445"},"modified":"2022-11-03T13:36:34","modified_gmt":"2022-11-03T12:36:34","slug":"augustapfelbutter","status":"publish","type":"post","link":"https:\/\/radishthegreat.com\/blog\/2022\/08\/15\/augustapfelbutter\/","title":{"rendered":"Augustapfelbutter"},"content":{"rendered":"\n<p>The <em>Augustapfel<\/em>, also known as the <em><a href=\"https:\/\/www.abendblatt.de\/ratgeber\/garten\/article205464061\/Klaraepfel-der-Geschmack-von-unbeschwerter-Kindheit.html\" target=\"_blank\" rel=\"noopener\">Klarapfel<\/a><\/em>, is an old European apple variety, made popular in the 18th century, that becomes ripe and ready in late July or early August.  These apples are not readily available for purchase in stores or markets because they do not keep long. The texture is too weird for eating &#8220;out of the hand&#8221;, and they cannot be used for <em>Strudel<\/em> (or <a href=\"https:\/\/radishthegreat.com\/blog\/2021\/03\/29\/radieschen-backt-amerikanisher-apple-pie\/\" target=\"_blank\" rel=\"noopener\">pie<\/a>) because heat turns them to mush. Fruit butters are relatively unknown here; fruit sauces are either chunky or jellied.
